Although the main content of the link does give the impression that you only have redress if your sickness coincides with pre booked planned leave, the quote below clearly shows that a successful case has been brought in the UK for people to carry there leave if they were unable to take it through no fault of their own.

Quote"The so–called Stringer case brought forward by a group of former HMRC staff in Britian found that a worker could carry leave forward, even into the next year, if he or she was "unable to take leave through no fault of his own".

This is tried and tested in a UK  court and you have a case name too. Set in stone I think, and whats more "no fault of their his/her own doesn't just have to be sickness which prevented and individual taking Annual Leave.
