Remember any statutory holiday entitlement not taken in a holiday year due to illness can be carried over and taken in following year.

I think you need to find out details before going this way. I assume there will be time scales in place and can only carry over if unable to fit in holday but if you come back to work in December and have three weeks of holiday left for example they may think still having three months is enough time to fit it in but if you came back 15th March you would not be able to so that is a different case. In my experience they tend to pay outstanding holidays though.
